MORE Apples . . .
Here's what I've been up to lately . . .
I've been making more Apple Butter AND Apple Scrap Jelly from the leftover cores & peels.
A friend of ours moved into a new house this summer. Which of course just so happened to have 3 fall bearing apple trees. Needless to say, they offered us some apples. We came home with two paper grocery bags full. Enough to make 3 1/2 batches of Apple Butter.

My first batch of apple scrap jelly didn't turn out so well. The apples I used didn't have a high enough pectin content. So after a trip to the store for more lids & pectin, I think today's batch turned out really well. I probably have enough apple juice from the scraps to make 2 more flats or 24 half pints of jelly... possibly more. We shall see.
Since I've made enough for now, I'm going to freeze the juice until I can buy more jars.
Btw, this is my first attempt at writing a blog from my new phone. So please forgive any mistypes or misspellings.
