Slow-Cooker Lasagna
It's what's for dinner!
This is the recipe I made up just after I was married 5 years ago.
Although back then I put it into a casserole dish and baked it - nowadays I'm always trying to find new ways to cook things and make good use of my slow-cooker.
Slow-Cooker Lasagna
Ingredients:
8 plain lasagna noodles
2 lbs Mozzarella Cheese
24 oz Ricotta Cheese
~4 cups Spaghetti Sauce (I make my own from scratch) or 2 Jars of Sauce.
1 lb Ground Hot Italian Sausage
Non-Stick Cooking Spray
Directions:
1. Cook and drain sausage - set aside.
2. Boil noodles until Al Dente. Drain water and rinse with cold water to stop the noodles from cooking further.
3. Once the sausage is cooled, combine the sausage and Ricotta Cheese. It should look kinda like a really thick sausage gravy.
4. Next coat your slow-cooker with the non-stick cooking spray. Add just enough sauce to the bottom of the pot to cover the bottom.
5. Now for the layers! They go like this - 3 Noodles, Ricotta/Sausage mix, Mozzarella Cheese, Sauce; Repeat.
6. The last layer will be noodles, ricotta/sausage, sauce and topped with cheese.
Cover and cook on low for 5-6 hours or high for 3-4 hours. You want the cheese to be melted and the edges slightly crispy.
I'll post a pic later of the finished meal on a plate! Yummm! Can't wait for dinner =D
